This recipe is a mix of several different recipes.  The ingredients are correct, but the amounts need to be eyeballed.

Crème fraiche - 3 Tbs to 1/2 container
Onion, cut very thinly in rounds – 1/2 to 1 big onion
Speck, cut in cubes or strips – ¼ to ½ pound
Grated Appenzeller cheese - ¼ to ½ pound
1 Tsp Caraway seeds
Freshly ground black pepper, to taste

Spread the crème fraiche over the shaped pizza dough.
Arrange the onion rounds and speck.
Sprinkle with the Appenzeller cheese and caraway seeds.
Add pepper.


Preheat the oven to 450 degrees.  (If using a pizza stone for crispier bottom crust, place pizza stone in cool oven then preheat.)


On a sheet of parchment paper, roll the pizza dough out very thin so it is about the size of your baking sheet.  Place crust (still on parchment paper) onto baking sheet and stretch the edges if they shrank back while transferring the dough.
Bake 15-30 minutes, until crust is lightly browned and crispy.  Enjoy!
